The Thai’s special grilled fish in Son La – (Pa pỉnh tộp)

This special grilled fish has complicating recipe, even choosing ingredients process. Thai people often use fresh carps and grill it but not divide into many parts.
Next, the carps are clean by salt and dried chili to subtract fishy smell. Then they are mixed with some spices, such as mac ken (a kind of forest pepper), ginger, garlic, onions, chili powder, lemongrass, and forest herbs. The spices are minced and rubbed to the carps.

The grilling process

People will horizontally fold the carps then clamp them by grate. The carps will be grilled on charcoal stove.

When being grilled, the spices will make the carps ripe easily and more fragrant.
